Nestled in the heart of Nelson, L&C French Bakery, a BC Green Business member, has been delighting the community with its artisanal pastries. As a lesbian couple from France, owners Lisa and Cyrielle bring their love for high-quality and sustainable baking to every creation.
One of their biggest initiatives was ensuring all packaging to be compostable and recyclable. While this came with its own challenges, such as finding materials that maintain freshness, it was a necessary step to reduce the bakery’s environmental footprint.
Food waste is another issue they tackled head-on. The bakery team developed creative ways to use surplus ingredients, such as transforming day-old croissants into almond croissants or incorporating extra produce into seasonal specials. These efforts not only cut down on waste but also added new and exciting menu options for customers to enjoy.
Their commitment to sourcing locally has also been a key component of their sustainability journey. By partnering with local farmers and suppliers, L&C reduces transportation emissions and strengthens the local economy. These collaborations have fostered lasting relationships, allowing the bakery to work with other businesses that share their values.
Looking ahead, L&C Bakery plans to continue expanding its sustainability initiatives. They’re exploring renewable energy options and considering more plant-based offerings on their menu. By earning their Green Business certification, L&C hopes to inspire other small businesses to take steps toward sustainability. “It’s about progress, not perfection,” Lisa says. “We’re all learning, but if everyone does their part, it makes a difference.” L&C French Bakery is proving that even a small neighborhood bakery can lead the way toward a more sustainable future, one delicious treat at a time.
